Need Some Good Gator Recipes
I have a freezer full of gator meat, tail, shoulder, jowl meat, ect. I could really use some recipes for the stuff. I have eaten plenty of it fried and, when done right, it is good but a guy can only eat so much fried gator. I have also made sausage (so-so, not great), Jamaican style jerk gator (sucked) and have tried a few other forgettable recipes.
So, with all the Coon Ass's and Cajuns on this board surely somebody has a surefire killer gator recipe that can help lighten the load of meat in my freezer and free up some room for this years catch?

i know this is still fried but good Alligator Balls Recipe
1 lb Chopped alligator meat (i use a food prosesor) 1 Egg 1 tb Finely chopped onions 1 tb Finely chopped celery 1 tb Finely chopped parsley 2 tb Finely chopped shallots 2 ts Lemon pepper 1/2 ts Salt 1/4 c Bread crumbs 1 c Cooking oil Flour to dredge
Combine all ingredients, form 1 inch diameter balls, allow to set one hour. Dredge in flour and fry till brown. Serve hot

Alligator Jambalaya Recipe
1 lb Marinated alligator fillet cut into small pieces 1 lb Andouille sausage cut into chunks 3 tb Oil 2/3 c Bell peppers chopped 2 cl Garlic crushed 3/4 c Parsley 1 c Chopped fresh parsley 1 c Chopped celery 2 cn Tomatoes (16 oz each) 2 c Chicken stock (2 pkg chicken cube mix + water also works) 1 c Green onion 2 ts Oregano 2 ds Red hot sauce (optional) Cajun spices (blackened or Cajun king herbed spice excellent) to taste Salt to taste 2 c Raw white rice
In deep frying pan (cast iron preferably) sauté the bell pepper, garlic, parsley and celery. While this is cooking, add tomatoes & their liquid, the chicken stock &, green onion to a pot that can cook on the stove and in the oven (Corning ware ) Stir in spices, sautéed vegetables raw rice, sausage and alligator fillet pieces. Cook on medium-high heat until liquid is absorbed (stir occasionally to make sure rice doesn't burn on bottom) and then bake covered in the oven for 25 minutes

Grilled Cajun Style Gator Tail Recipe
4 To 6 Lbs Gator Tail Lemon wedges
Cajun Seasoning Mix:
12 T Paprika 6 T Garlic powder 3 T Salt 3 T White pepper 3 T Oregano, crushed 3 T Black pepper 2 1/2 T Thyme 1 T Cayenne pepper
To make seasoning mix, combine paprika, garlic powder, salt, white pepper, oregano, black pepper, thyme and cayenne pepper in jar with tight fitting lid. Shake well to combine. Mixture may be stored for up to 3 months. When ready to cook, cut gator tail meat into 1/2" cubes. Roll each cube in 1 tablespoon of the mixture. Cook over high heat on an outdoor barbecue grill or under the oven broiler for 4 to 6 minutes, or until gator tail meat is white and firm to the touch. Serve warm with lemon wedges. The seasoning mixture will coat up to 24 (4 oz.) servings of gator tail

Alligator Sauce Piquant
1/2c flour 1c cooking oil 1 large chopped onion 1 garlic clove chopped 1 bell pepper chopped 3 ribs of celery chopped 1/2c green onions chopped 2 bay leaves 1 can tomatoe sauce 1 large can of tomatoes 2lbs of gator meat cubed Salt, pepper, louisiana hot sauce, tony chaceries
Make a medium brown roux add onions cook till wilted/pulpy Add garlic, bellpepper, garlic, celery, tomatoes, tomatoe sauce, 3 cups water. low/medium heat for 30minutes Add meat, salt pepper, hot sauce, tonys, bay leaves. cook till meat is tender over a low/medium heat.

On a big gator take the jowl meat and stuff with onion,bell bepper,garlic,jalepenos and seasonings and cook like a pork roast.Little gator=fried,all others saus piquante

Blacken Gator Meat
Cut the meat in thin slices, use some Blacken Seasoning mixer, get black iron skillet hot, start blacken. My kids love it and we don't fried it anymore.
