Smoked duck
Who has done it? I got an electric smoker for Christmas and want to try it. What kind of wood do you use and how long do you smoke them for? Do you marinate them first or just soak then in water for a few days?
I think I want to smoke some breast before I add them to gumbo.

Brine them, stuff them with sweet Italian sausage or maple sausage, put some apple, pecan or cherry wood in the smoker, set the temperature to 225 and forget about them for a few hours.

Had a guy in town smoke some Goose breast for me.. It turned out awesome he made a salt brine and put a heavy Cherry smoke on em/

Of my favorite ways to cook duck.
250 for 2.5-3 hrs for big ducks. I inject mine.
First time I did some my dad was giving me shit saying they would be no good. Once he tasted them, he was amazed. Did two ducks for Christmas. My dad and FIL tore them up

I let mine set in brine overnight then cut an apple and stuffed it in the cavity. Smoked for 2 hours at 250 with apple wood chips. I also filled my water pan with apple juice. Did this at thanksgiving and Christmas and people who don't normally like duck like it this way.

I use redwine and water in my pan.
I also got an electric smoker for Christmas. Makes it a lot easier than fooling with the charcoal.

pecan wood for 3 hours at 225. Do it many ways but my fav. is just plane ol duck breast.
second is breast stuffed with a pepperjack, peppers, bacon past. Wrapped with thick bacon for flavor.
