Last Saturday durin' all the inclement weather ...... I cooked a DuckGumbo that any South Louisana feller would have been proud of !!

StumpGrinders posted one time 'bout Bacon grease for yore roux preperation and I tried it. Used a whole package of GreatValue Bacon .... it makes alot of grease. Stirred the flour in 'till it gots just rite. Used the fried Bacon and fat in the Gumbo. Other than the Ducks and Bacon I installed Eckards sauge and lots of Shrimp !!!

For a East-Texan Stew type feller ....... it did turn out Good !!!! :D

Sounds good. Just never had bacon in my gumbo. Being from South La I have never made my own Roux. We just use Savoie's roux.

making your own is the best but savio(sp?) is not bad in a pinch.
I never tried the bacon grease, i might have to try that.
but gumbo ain't my specialty, jambalaya is.

although I must admit..... never heard dat combo before, but you might be onto sumthin with ur duck/bacon/sausage/shrimp gumbo. lol ;)

I been meanin' to ask you.... you know any McFarlands from around ur parts?

I likes DuckBird meat .. Bacon .. Shrimp .. Sawage !! Had to be good together !!! :lol:

McFarlands ?? I know a few of 'em .... even kin to some by way of marriage !!
