 Don't bash me too bad----
I'm just a Yank who loves Southern cooking hence my question. I have defrosted my last package of homemade Boudin and set the red beans to simmer with ham hocks and seasonings.I'm also defrosting some Gumbo base I made in Jan. Should be a good dinner tonight. Ok now my question--I have used Paul Prudhomme's Louisiana Kitchem cookbook for years along with many recipes I get off the net as well as a those from friends. What do you folks think of Paul's cooking style and recipes?? Good, Bad, or Ugly.

I don't really have a comment on Paul's book, but I would HIGHLY recommend that you get yourself a copy of this book. After the Hunt http://search.barnesandnoble.com/bookse ... DD%2DFolseFantastic recipes, but the pictures and stories are worth the price alone.

Can i sub mushrat for Nutria?? I'll look for the book next time i'm in town. Thanks--red beans are ready for lunch with Boudin---dogs are trained for day and truck is ready for camper/trip next week.

Dinner was long and very good--started with some Boudin on crackers/Tabasco Sc. Then had some Gumbo sans rice as wife made some corb bread muffins-then we ate red beans/ ham and seasoned collard greens.-enough left over for todays lunch- with rice.
