 Super Bowl & Playoff Recipes
Well with 30 days of Playoff Parties and then the Super Bowl....
What are your favorite recipes for football gatherings ???

Duck breast marinated in Italian dressing, stuffed with cream cheese and jalapenos, wrapped in bacon, and then grilled.

Here is whats cookin at the GigaFowl house today.....
Garlic Meatball Po'Boys - with provolone cheese and beer gravy by Emeril Lagasse
1/2 lb ground beef 1/2 lb ground veal 1/2 lb ground pork
1/2 cup finely chopped yellow onion 1/2 cup finely chopped green onion tops only 1/2 tsp finely chopped garlic 1 large egg 1/4 cup bread crumbs 1 Tablespoon Worcestershire 1 teaspoon salt 1 teaspoon cayenne 15 to 20 whole pealed garlic cloves - inserted whole into meatball
Mix all that well with yer hands - and form 15 to 20 meatballs which are a bit larger than a golf ball - insert a whole pealed clove of garlic into the center of each meatball
In a shallow plate combine 1/4 cup all purpose flour 1 Tablespoon - BAM - Emeril's Creole Seasoning
Roll meatballs in the flour mixture - then KEEP any excess flour mix for later
In a big ole cast iron skillet - over medium heat - brown the meatballs evenly 1/4 cup vegatable oil Turn often and set aside as they are fully cooked and browned to your preference
Now toss in the excess flour mix which you saved and bust up any bits stuck to the bottom of the cast iron with a wooden spoon or scraper paddle - after about 3 minutes add
2 big ole yellow onions sliced into 1/4" to 1/2" onion rings - cook and season with an additional 1 teaspoon salt 1 teaspoon cayenne
Cook stirring constantly till onions are sligtly soft - about 3 minutes - then slowly pour in
1 Beer 12oz - your choice of brand 1 cup water
Bring to a boil - then return the cooked meatball to the skillet - reduce heat / stir / simmer uncovered for about an hour - until gravy thickens - turning and basteing the meatballs with the beer gravy every 10 minutes
Serve on French -or- Whole Wheat bread with your chioce of mayo / mustard / honey mustard and cover with thinly sliced provolone cheese
6 feet of French or Whole wheat bread 1/2 lb of Provolone cheese
