Post Corn and Crab soup
1 stick real butter
1 sm. Bag grated Velveeta cheese
1 large Onion (chopped)
2 ribs celery (chopped)
1 clove garlic, chopped
1 bell pepper (chopped)
1 Tbsp. chopped parsley
1 lb. Crab meat
1 qt. half and half
2 lg. cans chicken broth
1 bag frozen cut corn (I use the frozen steamer corn)
1 lg. can cream style corn
1 lg. container seafood stock
season to taste

Melt butter in large heavy saucepan. Add onions, garlic, celery and bell pepper & cook until clear, about 10 minutes stirring often. Add seafood stock, cream style corn, corn , half & half and cheese, cook till cheese is melted. Add Crab meat, Seasoning (Tonys or any other seasoning you may like). Cook, covered on low heat for 20 mins.

I also put shrimp in here sometimes. Add it when you add crab

Post Re: Corn and Crab soup
I cooked this last night and it was the best soup I have ever had. I had people arguing over
who was gonna get what was left after everyone ate. The only problem with it is I ate so
much that it made me lazy.

Cooked it again last night. It's delicious. I doubled the amount of frozen corn, added a pound of fresh shrimp, and didn't use nearly as much stock.

It's on the stove at my house now. I skipped the chicken broth but added 2 lbs of crawfish tails. Smelling good. It's my wife's favorite so if the little one goes to sleep before I do, it's gonna be on in this house!!!!!
