ok u need a tub of guidrys cajun seasoning a pack of green onions, chop them, and use all of them and a small can of mushrooms stems and pieces take ur breast, with gizzards and hearts, ur guidrys and ur green onions with mushrooms and throw in the pot after u put just a tad of olive oil or cooking oil brown all that shit for about 40 mins. instead of using water u use a bottle of morgen david blackberry wine. after browning for 40 mins u turn the fire on low and pour the entire bottle of the blackberry wine and the pot and let it cook down till the wine is gone. u dont need no damn salt or pepper so dont ruin it. eat over rice if u try this shit u better pm me and let me know if u like it, bitches |

It's a simple recipe. The key is to brown a long time b/c that's where flavor comes from. Also never add water n this recipe, use morgen David blackberry wine. I usually buy a tub of guidrys Cajun seasoning, which is onions and vegetables that r per cut I also add a red bell pepper fine chopped and a few pieces of pickled garlic I use about 10-12 breast chopped. I usually get 3 strips from a teal breast. I like it meaty. I use the hearts and the gizzards bc that's the best part I put a Lil oil n a pot, like a cap full. I throw n breast hearts gizzards bell pepper, guidrys, garlic, a can of mushrooms and whatever else I mentioned. The fire is on high and the lid is off. I brown all that shit. About 10 mins in the oil is gone so I use wine, just a little at a time to get me 10 more mins. After 40 mins of browning where everything is mushy I pour the entire bottle n the pot. I put the lid on and put the fire on a medium and cook until the wine is gone. Then I eat over rice. Any questions feel free |

At a duck camp I hunted last weekend, we did exactly that however after we browned the meat, we put 6 cups of water and 4 cups of rice and cooked it down so it came out like a jambalaya. And it was damn good. |

I have been doing that for years only diffrence is I cut my own onions and only brown the ducks for 39 minutes. Anyway comes out great. Another way I like to do it is rub your ducks down with butter first season outside and stuff with onion and gralic. Use same steps after that. |

Did my 40 and dumped the whole bottle and stirred. On taste, I think mine needs a lil salt and perpper or maybe even some Tony's. Guess thats from eating spicy food. Overall has a great taste and we are cooking down now...what is cook time after rest of bottle poured in with lid on ? BTW....I brined my ducks (4 gadwalls) for 3 days in salt water in the fridge. |

Tried this cookin' style just this last Saturdays ..... Everyone seemed to like it very well .... Mines daughter says it was the bestess DuckByrd she had every ate !!!  Very easy to do and takes enough time so you can sit 'round and fellowship. I personnally wouldn't want it everyday .... but ever so often it's a good cook !! Thanks fo sharin' Jesse !!! |
