Cook this tonight and it was awesome. Butterfly and pound flat a whole backstrap. Marinade overnight in Dale's Marinade. Pull out and stuff with japaleno shredded/slice cheese and boudain. Wrap in bacon and cook to a medium rare. Original recipe called for Tony's, but marinade and bacon are salty enough I found out. We served it with fresh green beans and twice baked potato. yea for me too....i know a family marinade that is close to Dale's but not as salty....gonna try it next time |

Just don't over cook it and you cant go wrong. Man I had some fresh yellow fin tuna on tuesday that was caught two days before I got it and never frozen. Cooked it 2 minutes on each side in a cast iron skillet. Holy F'ing shit I would almost take that over a steak any day. |

i like catching tuna and then cutting a cunk off add a little soy and eat it then. mean while the rest of the fish is still alive. Just gotta get over the fact that it is warm sushi |

I've never tried sushi but I would if I knew the best place to get it. I'd just want the fish though and not all of that other crap that they put in the rolls.... And I would have to have ketchup. |

Damn, that's good ![]() ![]() I butterflied the loin and seasoned with salt, pepper, granulated onion, powdered garlic, and paprika. Stuffed it with some of my homemade jalapeno-cheddar deer sausage and wrapped in bacon. Once it got close to mid rare, I pulled the bacon off and seared the outside. This turned out so good, definitely going to revisit this one! |

Only one time I used ketchup and couldn't eat my meal. Years ago I bought some green ketchup when they came out with a couple different colors. I put it on my chicken and dumplings and I just couldn't eat it. After I mixed it up good it looked like someone had shit in my plate ![]() |

Or just make some, got to be one of the easiest sauages to make. I usually make 40lbs at a crack. Along with summer sauage,salami,brats,and hot sticks. |
