squirrel receipes?
Indiana squirrel season comes in today. Got any receipes you highly recommend? Thanks. Netman

A little long winded but worth the work. Toss quarters in crock pot covered in water for 2 hours on high. Cool them with off and dredge in flour n seasonings (like you use for fried chicken). Pan fry until outside is crispy but inside not done. SAVE DRIPPINGS!!!!! Layer the fried quarters in pressure cooker or dutch oven with onion slices between layers. Cook until meat falls off the bone when you try to pick it up. Use drippings to make white gravy. I like to shred a couple quarters and toss it in the gravy.
I would like to hear a good squirrel picante recipe!!

netman we just keep the four legs because the rib bones seperate from the meat and u got a pot full of daggers that'll catch ur pallet every time. u know us cajuns, we cook shit slow
anyways i usually season the legs, run em in an egg wash and batter em with fish fry. i season the egg wash too. chop u an onion, a lil celery and maybe so shrooms if u can find a good one. brown dat down real good and throw in a can of cream of mushroom cook dat for on low for a few hours till da meat fall of da bone thank me later

Salt, pepper, flour and fry the young tender ones quartered up. All 4 legs and backs too. Make up some gravy to put on rice. Hard to beat. My dad has squirrel dogs and my mom cooks this for me every time I go home.

I cook squirrel just about every way you can imagine, butterfllied on the grill, fried, smothered, in dumplings, in stews, in soups, you get the drift.....There is one thing you need to do though, parboil them, especially the older ones to make them tender. They taste good just about any way, they kinda have a lil' bit of a sweet taste.

I subsitute squirrel and rabbit for anything that requires chicken, my favorite is making a pot pie outta them.
