Post subject:  Ceviche

2 lbs of Fresh Mahi Mahi or (Red Snapper, Redfish, Trout, Flounder. Any delicate white meat fish)
8 Limes or 1 c of lime juice
1/2 bu of fresh cilantro
3 avocados diced
3 small tomatoes diced
2 ripe mangoes or other citrus
1/2 red onion - diced
3-5 Jalepenos to desired spiceness
2 cloves of peeled miced garlic

Directions: Cut the fish into cubes. Mix all the ingredients and let marinate for at least one hour. I usually drain the excess juice. Serve with tortilla chips, pita chips, or plantain chips. Should stay good for at least three days.

I love me some ceviche. Never have had any in a restaurant that was nearly as good as what you can make at home.

Looks good man,,

But on those plaintain chips, i ate some plaintains in Orange Beach last year! To me they tasted like when you vomit in the back your throat a little bit....

Maybe just me, or i had a bad one but the waitress laughed and said "you must be from luuuuuzzzzziaaannnna" in her best Redneck Roll Tide Alabama voice....

So, what they supposed to taste like?

I always use Hizzoner's recipe in the cooking forum. It's really good with some fresh shrimp cut into little pieces.
