made up one of these saturday, normally i use a piece of brisket or another lean cut of meat that i'd normally turn into jerky. Butterfly meat and make a sauce of fresh chopped garlic, dales, McCormick's steak seasoning, and a bit of ketchup to thicken, then spread on the inside. roll everything back up and tie roast style with butchers twine. Place in a cold oven, set at 300 degrees, should cook approximatley 1-1.5 hours. Let sit for a bit after it's out of the oven, and slice with a sharp knife.

oh, and you will need bacon. atleast one entire package.

I grilled filet mignon on my bge tonight before putting the uniform on. MMMmmmm We make the bacon explosion on the bge all the time. A great investment for sure.
