Not sure how many of y'all have ever had the opportunity to taste fresh Wahoo. It's probably one of my most favorite pelagics to eat. Shashimi on a fresh wahoo is second to none.

Wahoo can be cut into steaks and/or filleted out. I prefer the fillets and then cut them down to size.

Wahoo when grilled has a tendency to dry out and thus becomes no longer appetizing. I learned a trick down in Costa Rica a few months back. Marinate the steaks or fillets in ranch dressing. It will allow the fish to cook thoroughly just before it starts wanting to dry out. You can still season after a 30 min marinade in the dressing prior to tossing on the grill.

Try this basic recipe with it.

6 wahoo steaks

1/2 cup olive oil
1 table spoon old bay
1 table spoon tony chachere’s creole seasoning
1 tea spoon curry
1 tea spoon garlic powder

Directions:
Mix all seasonings into olive oil in small bowl. Paint both sides of the fish with seasoned olive oil and place on hot grill. Cook until meat flakes to the center without drying out.
