Deep Fried Ducks?
Going to fry some ducks (a pair of picked gadwals) after I fry the Thanksgiving turkeys on Thursday. Anyone done this before? Tips?
Was thinking about injecting it like I do the turkeys. Any guess on length of time?

I would inject it. It's gonna dry out quick. I would cook it medium rare

I fried some in lard. best ducks I've ever eaten! Not dry at all

We so some every year. Same way as turkey. Inject and peanut oil bath!

I have only fried teal but leave the skin on. Pluck the feathers. buttermilk bath. seasoned flour and into the fryer. 7 min on each side. Your grease should be around 350.

I gotta try that whole fried teal!
We deep fry duck breast bites. Soak cubes in heinz 57 for about 30 minutes then roll them in House Autry fried chicken breader and deep fry to medium rare.

I have used the store bought fried chicken batter before. It was pretty good if you like it real flakey.

Well we injected them with cajun butter then deep fried them after the turkeys came out the fryer. They were awesome. Highly recommend trying this.

Yeah picked them and gutted them. (Left the back bone in. Usually i take it out for grilling etc)
They were awesome. Turkey calls for 4 min a lb when frying. I fried the ducks (2 at a time) for 6 minutes.
And now I have an excuse to buy a big outdoor fryer.

Been deep frying ducks for years, they don't dry out if you leave the skin on and fry them no more done than medium. Most everyone that has tried them loved them.
