Recipe I got from a buddy. Cut duck breast into small cubes. Chopped shallots(I used white or red onion). Minced garlic. All to taste. Then add a tablespoon or two of montreal steak seasoning(1 or two depending on taste). Put everything in a bowl and stir it up. After it is mixed add olive oil while stirring just enough until it coats everything. Put in fridge for couple of hours. When your ready put a skillet onto the stove on high EMPTY. Nothing in it. When it is smoking hot, take the pieces of duck and throw them in. Oil coating will keep them from sticking. Sear meat on both sides til medium rare on the inside. May take a piece or two to get it right. Serve immediately over rice. This will be updated tonight with picks as I cook it.

I forgot to add I bleed my ducks out overnight as well. If you do it right they are as tender as beef filet tips. This shit is one of my favorite ways to eat duck.

I do somewhat similar but cut in strips. Especially with thick breasts like mallards. I will cut in half long ways then flip it up and butterfly them so they aren't so thick when eating.

Either pull out of the marinade (see fried duck thread) and throw in skillet or even pour in some of my marinade and cook it down until very little liquid is left.

Then how you eat it after that is also a toss up. Sometimes we eat it just out if the skillet with sides, sometimes eat it with rice, or most of the time put it on tortillas with cheese and hot sauce like fajitas.
