Filet a duck breast in half to make it thinner (for medium sized ducks, no need to filet teal). Season using your favorite spices, then cook them in hot bacon grease! IMO, cooking duck "medium" instead of "well done" makes them more tender, and tastier. Quick and easy. No need to prep meat any certain way. I just put the breasts in a baggy after cleaning them, refrigerated, then cooked them the next day. Just thought i'd share for those who havent tried cooking duck this way |

Leave some red in the middle and they will be delish! I've found cooking them well done makes them tougher and less tasty |

I butter flied some back strap and put some pepper jack cheese in it then wrapped with bacon. Put it in the oven pretty good |

Here's a really good thing also. Best with teal. Marinate with Italian dressing. Butterfly put a piece of pepper jack cheese and a JalapeƱo. wrap with bacon pass in egg batter then flour and deep fry. I like it rare to medium rare. Awesome |

No such thing as good duck.. Catfish love it and so do crawfish keep it bloody though |

I'm gonna try it with whatever i shoot this weekend. I'll probably go the cream cheese route, but def using the flower. Hell, i'll probably try the pepper jack/jalepeno too.. |

I like it with pineapple slices in the middle of the meat , then wrap it with bacon , DDM way is just as good done it that way to. |
