Wicked storms moving throught the Midwest today, had some time and thought would post up what we have been doing in the kitchen lately.... That doens't sound right for some reason!
Cooked up a bunch of zucchini bread the other day, pickled some green tomatoes, canned some kosher dills, made mullberry jelly, canned dilly green beans.
Tried a new recipe for zucchini hash browns the other night and think we found a new favorite zucchini recipe. We have zucchini coming out of our ears. Also like to take a zucchini slice lengthwise about 1/2 wide. So you lay the flat strips down, sprinkle with olive oil, kosher salt and fresh ground pepper. Throw on a grill and only flip it once. Good as a side dish to steaks.
Also take a fresh loaf of bread (not Wonder bread coonasses!!), slice about an inch thick sprinkle with a little olive oil. Put on top rack of grill until toasted. Pull off grill and rub toasted side with a clove of garlic. Take your grilled zucchini, onion, summer squash, portabellas (whatever grilled veggies you like), thin sliced vension backstrap, etc., and stack on the bread. Put some goat cheese on top and put under a broiler until cheese bubbles. Pop a beer, sit on the back deck and watch the sun go down!
