Jambalaya is good with gizzards, smoked wood duck gumbo, smoked mallard breasts with pepper jelly, and of course in a gravy and poppers.

I recently made some smoked duck egg rolls for the first time. They take a little work but they're fuckin awesome! You can make a big pile of them and freeze them for later too.

Smoke some ducks and pull the meat off, save the carcass for stock. Sautee some diced jalepenos, onion, corn and black beans.
Mix that with cream cheese and shredded pepper jack and the duck meat. Roll em up and put em in the fryer. I'd post up some pix but they didn't last that long!

Egg roll wraps. They're also called wonton skins I think. They had them in with the Asian food shit at the grocery store.

Throw cubed up breasts, onion soup mix and a can of coke into the slow cooler for 4 or 5 hours on low. Add canned corn and mushrooms and let it go another hour. Add some milk and flour to thicken it up and pour it over rice. Sometimes we add chopped up bacon , peas or carrots too.

I make kabobs with mine. Put a pineapple chunk next to the cubed duck breast, keeps it moist and kinda gives it a sweet taste.

We just started a new one a couple years ago for Thanksgiving:

2-1/2 cup celery
1 small onion
3 cloves garlic
2 small apples (red and green)
few handfuls of dried craisins (cranberry raisins)
2-1/2 TBLS poultry seasoning
little white wine

Sautee the above in olive oil and 1/2 stick butter (add apples last so they don't get mushy). Then add two packages of hamburger buns cut into 1/2" cubes. Then add some chicken stock as needed for everthying to get moist but not goopy.

Then add some raw, cubed duck breasts (~3). Stuff the turkey and cook as you normally would.

Tell yall what. Ate teal for the first time today and cooked it in a gumbo. Best bird I ate so far. I heard they were good in a gravy but I like the gumbo a whole lot.

Any duck is good in gumbo. Teal is best on the grill or fried IMO. We have cooked them whole before in the oven over rice. Teal is probably the most tender of the ducks I've ate.

Marinade in soy, coffee grounds and pepper. Grill to medium rare.

Marinate in milk and rosemary for a few hours. Pat dry and season with sea salt and cracked black pepper. Sear to medium rare and set aside and cover with foil. Turn down the heat and add a spoonful of butter to the pan to make a butter sauce. Slice the breast across the grain and spoon the butter sauce on top.

I make a lot of duck jerky. Kids don't like cooked duck, but they will eat the entire tray of duck jerky..
