Post Bowfin / Choupique HELP!
How do you keep the meat from turning to mush? Is it something you have to cook right away like sand trout?

I caught two on saturday and filleted them out. i tried to cook them just now for lunch and the meat was absolute mush. I could barely pick it up without it completely disintegrating.

So, Pro Tips....... lemme have 'em! ;)

I've heard that they are horrible, and I've heard that they are decent. Then I was googling them and up north they call them Grinnell and claim they are the best fish they have around.

The meat looked good when I filleted them.

Keep them alive in an ice chest until ready to cook. They breathe air so just leave a crack in the chest. Cook immediately

If you fillet them out and fry them DO NOT SOAK IN WATER!!!! DON"T EVEN WASH THEM.... Wipe the fillet with a damp rag and batter and fry.....

I've never seen a bright green one, most of them around here are usually jet black on top with a tan belly with spots that stand out more on some than others.

In many saltwater fish, the hormones during spawning make the meat mushy. (at least mushier than usual)

if I have a few to clean I fix a big bowl full of ice and put some water in it and add some vinegar to the ice water! and my ole lady will also make patties out of them too

Thee underside of choupique turn green during spawning season. Cook them rite away. Or make boullets in a brown gravy if they are mushy. If you fry them and they are mushy put them in the fridge over night and re heat them and they will firm back up.

I keep mine alive till I'm ready to cook it. Knock it in the head and fillet. A Quick wash off, then (something my gran paw taught my dad who taught me) put a little mustard and season the hell out of it. From there straight into the grease. If you don't trust me just try it with one piece. Choupique make their own crispy skin. One of the best fish I eat along with a sac-a-lait.

When I clean me I chop the tale fin off so any blood that can get into the meat will drain.
Choupique come in handy around spawning season cause their eggs are used to substitute sturgeon caviar and they are said to have a better tasting caviar. The choupique eggs go for over $100 a pound, if every coronas knew this he would be Rollin in money lol

Wow I was hoping to pick up some new recipes, but all I got was pissed off. I was raised to eat anything I kill so forgive me if some one already said this, because I got tired of reading BS. Now the trick to keeping the meat solid is oposit from gar keep it alive as long as possible put in ice salt water as soon as you kill it filet fast bread and freeze fri tin filets frozen on sum what low heat the main thing is keeping it cold when done should have the texture of salmon if that doesn't work make balls with a little hush puppy mix
