pheasant and dumplings is hard to beat.

Cooked pheasant and sausage jambalaya and gumbo a few years back when we went to NoDak after em. Made pheasant and dumplins when I got home. Gonna try crane thighs and dumplings next week. The thighs on ems pretty light meat, looks like it'd make a good dumplin. The legs was all tendon though...
