I don't know what it was, but that fish covered with the salt and spices came out so juicy. Compacting the spices over the fish kept all of the moisture inside. It was good. The two cooks were my son in law and the other a boy friend, two Yankees trying to impress the palate of a Cajun....pretty tall task but they did a great job. |
