Redfish Recipes
Let's hear it... Here's what I usually do, but would like to try something different.
Melt stick of butter in microwave Dip redfish filets in butter Sprinkle fish with Paul Prudhommes redfish magic or Tonys Heat cast iron skillet with a little olive oil over gas grill on high setting Cook fish about 2 minutes per side.

Make a roux with a cup of each Cook vegetables into roux. Add 28 oz of canned stewed tomatoes 14 oz of tomato sauce Season with salt, pepper, garlic powder, about tablespoon of crab boil. Squeeze in one. Lemon. Cook the tomatoes down for About 10 mins Add redfish and cook for about 10
Serve over rice and chopped green onions on top.

Redfish Recipes
Good thread!
My version of redfish on the half shell:
Rub filets with olive oil and liberally sprinkle you favorite Cajun seasoning. I use Tonys or Cajun land blackening season. Place on grill on med-high heat until the ends curl up. In a sauce pan, melt butter, lemon juice, granulated garlic and Worcestershire to taste. I like more of a lemon flavor. Baste filets with this when done before serving. I found that you don't need to baste while cooking.

Half shell on pit or oven with butter garlic lemon juice seasoning Or Pan sear put in fish tacos Or Chop up saltine crackers in food processor, mix in little bit of almonds, garlic powder,and paprika , then make egg wash, for the sauce teaspoon lime zest some lime juice, balsamic vinegar, chopped cilantro and garlic. Egg wash filet, putt in cracker fan fry then pour sauce over fish after in plate

Pat filets dry,,,rub with olive oil. Salt one side...Then generously cover both sides with Hidden Valley ranch seasoning powder and rub in. You cant over do the ranch powder so put a lot.
Put fish in oven on broil in a pan for about 6-8mins on high depending on oven. Make sure top does not burn....

Half shell and blackened are always great.
Something a little different I started doing recently. Baked mayo reds...Mix little melted butter, 1/3 cup mayonaise, parm cheese, diced onion, garlic powder, old bay, tonys mix into a paste. Add paste to bowl of fillets and mix up. Lay on bake sheet and lightly cover with bread crumbs. Bake on 350 for 25-35 depending on size. Last 3 minutes or so broil until tops are golden brown.

Wisk 2 eggs with 1-2 cups of milk Dip redfish fillets in milk/egg mix Batter in fish fry or seasoned flour and fry till golden brown

Pan sear couple peaces of red fish in a little olive oil with a little lite seasoning of ur choice. Place on plate and set aside. Dice onion, bell pepper, galic, and a little green onion and sauté in large skillet on med/high with some none salted butter. Add a little white wine to glaze it a bit. Then add fresh lump crab meat and some pealed shrimp. Cook 1-2 mins then add some heavy whipping cream. Turn down heat while stering occasionally season to taste. I use salt, black pepper, cayenne pepper, freash Tyme, and finish it up with Tony's.. After about 5-8 mins cream will become thick. Place redfish on center of plate and spoon the sauce on top and enjoy. Redfish Pontchartrain or I call it Redfish Lafitte..

Blackened in a hot cast iron skillet, then make this and pour over top. Pontchartrain Sauce (1 serving)
Ingredients: 5 button mushrooms quartered 1/2 cup unsalted butter - cut in half 1 lemon 1/4 cup white wine 1 cup heavy cream (40% fat) 1/2 cup small shrimp or diced larger shrimp 1 tablespoon minced garlic 1 bunch parsley chopped 1 bunch scallions chopped
Directions: Heat pan to high heat. Add 1/2 of room temperature butter. Add mushrooms and sauté. The mushrooms will soak up all of the butter, so shake pan. Once mushrooms are brown, add wine to deglaze. Once wine separates, squeeze lemon and add cream. Reduce cream until thick. Add shrimp, parsley, and scallions. When shrimp is pink and cooked, add garlic and remaining butter. Take off stove, mix, and pour over fish.
