The boston butts were on sale at franks for $1.29/lb , so I made and stocked up on some smoked sausage.

Looks very good! I got a food grinder for the holidays and I'll be trying my hand at making some sausage when its not so damn cold out. What type of casings would you recommend?

I use hog casings for making fresh or smoked sausages , never really tried anything else to make them.

It just so happens that the butts went on sale last week at Rouse's for $.98 lb so I stocked up and made 33 lbs of boudin.

Cut up the meat threw it in the pot and cooked it till almost done then ground up the meat while I simmered the onions and peppers.

Put meat back with the onions and peppers ,seasoned it an added cooked rice , then stuffed into casings.

Packed it all up and cooked a couple links and the leftover from the stuffing tube.
