Making lazy mans chicken and sausage gumbo and rice. preheat the crockpot, turn it on and dump a pot of boiling water in it. Cut up two onions, three peppers, three sticks celery, and a metric butt ton of okra and mix in a bowl. Dump the hot water out of the crockpot and put the vegetables into the crockpot. Warm up chicken stock but do not boil, and pour into crock pot. Cut up sausage and chicken thighs and add to pot. Keep the crockpot on high. |

Next is the roux. in dutch oven mix cup of vegetable oil and 3/4 cup flower. On medium heat start stirring and do not stop. It takes about twenty minutes. keep stirring and it will turn a caramel color, and then will darken to look like milk chocolate or darker. When it gets dark, it will start to smell nutty. Pull it off the heat and continue to stir and let it cool until it is just warm. Add it to the vegetables. Do not add the roux while it is first done, as it will be very hot and will splatter when it hits the much cooler vegetables. |

After about five hours of cooking, add a cup of rice. It will absorb the extra liquid and thicken the entire mixture. Eat a bowl or two of it with some cornbread, and you will want to go slap Dean Guidry. |

Even been from the Bayou I enjoy this kind of gumbo! Looks good ranger! Really it's how gumbo originated! Throw it all together and cook it! Nice job! |
