fried fish
Walked back to the creek with my neighbor yesterday and got one walleye, one large mouth, one small mouth and one white bass.
Dipped em in a drench made of eggs, buttermilk, and hot sauce, and battered in corn meal, white flower, and seasoning then fried them in peanut oil.
Mixed up store bought hush puppy mix, but added in one fine chopped onion and half a can of whole drained corn.
Threw some frozen fries into the grease to finish off the meal.
Turned out pretty good.

I grilled some salmon along with it. We got home from Wednesday prayer meeting, and I finished off the rest of it.
I will admit it was a pretty good meal.
Now I need to get out and gig some frogs before I head out on this next deployment. I imagine it will be a long while before I get any home made hush pups and fried seafood. They do not fry much fish over yonder.
In 2007-08 I was an advisor in Iraq. We had done a mission that turned out well, and to celebrate the Iraqi battalion commander wanted my team an I to eat a special meal with him. We showed up, and he had a young Kurdish kid on his personal security detachment named Aram that was coming back from Salmon Pak open markets and he was toting a clear plastic bag with a big live carp in it. The thing looked like it just came out of the Chattahoochee River. My people aint bashful about eating carp, but most of my team members were not overly enthused about eating it.
They built a wood fire on the ground, stacked up concrete blocks and put some hog wire fence on the blocks like a grill. They cut that carp down the middle and laid the two halves on that fence, and grilled it. They put some sort of purplish looking season salt on it. By the time it was done, the meat was about falling off the bones. They do not use plates and silver wear much, they just put it on a table with a big bowl of rice. You grab a handful of fish and a hand full of rice and get after it. It was one of the better meals I had in Iraq. I actually got where I would request carp.
They raise carp in farm ponds like we raise catfish, so it is pretty clean and tastes good.
