Ah dam it. I'm going to have to try this now.

I old timers here talk about doing this with venison, they'd find a nice cool damp valley that never got the sun and hang a whole deer up and not come back until it was black.

Cooked the steaks. Here's my honest review. They were excellent steaks. Great flavor and tender as all get out. That being said, I'll take a butterflied venison filet any day of the week. I honestly couldn't tell a night-and-day difference between a good ribeye steak and one that had been aged 40 days. Nevertheless, here are the pictures.


1. The aged roast as it came out of the fridge





2. Out of the bag







3. Shaving the bark







4. Done





5. Slicing. 1.5" thick turned out 10 steaks







6. I brushed each side in extra virgin olive oil, seasoned with sea salt and course black pepper mixed with some grocery store steak seasoning. Seared and brought to temp using soaked apple wood chunks over the coals.

Looks good. I think it's the cut as well. The tenderloin I did was not as good as the Ribeye. My ribeyes are 5 times more flavorful. I'm going to go to 50-55 days on next Ribeye.

Wanted to try this for a while and after reading this thread, I could not resist. I started both a ribeye and New York strips. I think I'm going to dry age the strips for 45 days and the ribeye steaks for 60 days. Wife is not happy I'm taking up space in the second spare fridge with more $&it!! Beer, duck meat, deer meat, frozen ducks for mounts and now this!!

I have the dates annotated on my work calendar to remind me when they are ready and my Operations officer asked me what those dates and event swere? I laughed and said wait and see!!

You should put some herbs and shit in there so it was seasoned when you pulled out the meat

It's simple. get a mud motor. shoot ducks in the face.
