the best way to cook London broil or other thick hunks of meat on a big green egg. You put the plate setter in and cook the meat indictecy at 250 degree until the internal temp reaches 115 degrees. Take the meat off and put it on a plate and cover to keep the bugs and shit off. Take the plate setter out and bring the temp to 600 degrees and throw meat on for 60-90 seconds a side or until the internal temp reaches 8 or so degrees below what ever doneness you prefer. Set meat on plate and let rest for 10 min the enjoy.

Been wanting to try the reverse sear method. I just don't have the time to cook a steak for over an hour. Besides I like it medium and the wife likes it closer to well done so it'd be a wasted effort on her. I get a steak perfectly cooked and she goes and throws it in the damn microwave. Pisses me off!
