What will wrong transom angle do ?

It will diminish performance a bit.... Even those few degrees matter to an extent....

Unlike outboards which are all the same - Mud motors from each maker
prefer different transom angles.... It is not a huge loss of performance
like a height mismatch would be....

That is why it is best to pair the MM to the hull that best matches it for max performance....

I put a pro drive on my timber Creek which had a Mud Buddy on it and has a 21° transom angle seems as if it lifts the back of the boat and pushes the front down and slides all over now when turning

Actual trim, and not just the adjustment from the trim motor, but the overall angle of the lower in relation to the water, the prop (rake, blade shape, etc), and definition of performance matter much more than the angle of the transom, within reason (on a 16 or 20 inch transom, a couple degrees can be dealt with just by moving to a different trim pin hole). It's a non-issue that people make into one. Too many differences of other factors that can't be adjusted out without actual effort to claim 21 vs 19 (or plug in your numbers) degree transom is the difference. Not worth chasing.

You want the back of the boat to lift. When you throttle up in shallow, you don't want the rear to squat, or you wind up having more issue getting on plane when it matters.

As far as the sliding around, it's a flat bottom boat. They do that. If they turn sharp, you run the risk of shedding too much lift and getting stuck. Trim the motor down and adjust speed accordingly. Also, shift weight in the boat to turn better.
