 A Recipe to share...
I'd like to share one of my favorite chili recipes.
1/2 lb of slab bacon; cut into small cubes 1 lb of spicy Chorizo 2 thick goose breast or 4 mallard duck breasts; cut into bit size pieces 1 Red Bell pepper; cut into bit size pieces 1 Yellow Bell pepper; cut into bit size pieces 2 jalapinos; just de-seed and cut up small 1 Habinaro; de-seed and de-vane and cut up small 2 large sweet onions; cut up small 2 cans of spicy chili beans 1 can of light kidney beans 1 can dark kidney beans 2 cans of tomato sauce
Fry up the bacon to crisp up and toss into the crock pot leaving bacon grea in the pan; then fry the chorizo and toss into the crock pot; leaving the grease in the pan to fry up the duck or goose meat. Toss that meat in the crock pot with all the other ingredients.
Turn the crock pot on high for about 3 hours stiring every now and then. after about 4 hours turn on low and you will notice the liquid has increased due to the veggies. Thicken to your liking with corn starch, flour, or tomato paste.... Taste and season to your liking and heat level. Cook on low for a few more hours sitrring about once an hour.
