Yeah you can't sell anything that is considered wild so they use domesticated breeds. It's a combination of laws against harvesting wild game for commercial sales and also all meat being subject to health code regulations. |

Some of the norhtern state have whitetail breeding farms.....hell if they was using axis that's the only sausage I would buy.......those deer taste the best. And theynow free range throught the trans pecos. Escaping from.high fenced exotic ranches. |

Well down here in s. la they have been selling Pork/Venison mix smoke sausage for years. I always thought the venison came from these small deer farms we have all over the south including the big tx ranches. But they is some tasty sausage. I usually cook this in my gumbo w/ some tasso. That is it. I am cooking a duck gumbo this weekend. |

All most all commercially sold "venison" will be red deer or elk. I am not sure of the legalities of the elk but I do know they are preferred because they are bigger animals. More usable carcass |

I am willing to bet if it is coming from overseas that it is something from the equine family. |

In Europe deer are farmed like we do cattle over here. 90% of the venison consumed worldwide is eaten in Europe. By the way,I would put Rabidouxs venison/pork sausage up against any of em and its made right here close in Iowa,La. |
