We shoot a lot of geese. Ducks are so-so but we've got geese. Here is the best method of preparing them...
Brine: Gallon ziploc bags (4 fillets per bag) fill with water 6 tsp brown sugar 2 spoons of sea salt Refrigerate for 4 days changing brine if you feel like it.
Marinate over night in Lowry's Sweet Garlic Teryaki and add several healthy dashes of sweet basil
Hot grill with apple wood chips
Cook to rare/medium rare
Dice and serve with grilled veggies over rice or cous cous.
