For gator sausage? Anyone got one they would share with me? I've hear it's pretty good I'm going to try and make some.....All I need is % of fat to meet and some good spices to mix in. |

Never made gator sausage ---- but goose sausage is the same mix as deer sausage ---- 60 game x 40 pork (bostom butt) seasoning for a total of 30 lbs combined meat scoop is the one oz coffee scoop that everybody uses 3 to 4 scoops - pickling salt - I use 4 (not table salt) 2 to 3 scoops red pepper coarse flakes - 2 is mild - I go 3 and add jalepenos (not ground red pepper) 1 scoop black pepper 1 scoop garlic salt if you like garlic - or - instead I prefer 30 jalepenos (de-seeded and diced - OMG don't put the seeds in) 1 scoop pink commercial FLP treat (you can buy it at most meat processing houses) Don't skip the treat - it cures the meat - you gotta have it... The other stuff is flexable to personal taste.... grind - stuff - smoke @ 145 for 3 hours give or take - pull it when it wrinkles pretty good - don't over smoke - we test cook a link in pan with 3/4" boiling water to test also before pulling it - boil about 3 minutes each side to re-moisten - basically once inside meat temps hit 135 to 140 degrees its done... |
