What are we skinning? That helps narrow down what kind of skinning knife your looking for.

Most importantly deer but I will be skinning some gators sometime this month. I would like to find one good enough for both jobs..

On Deer, I use a Buck 105, Kawasaki Mule, a Rock, and a Rope - total time takes about 3 minutes or less...
Hang the deer up by the head, Split the skin down the neck and belly, and each leg, ring around the neck and each "elbow" of the legs - pull the neck skin back a little and put the rock on the inside of the skin, tie the rope around the rock on the outside of the skin, hook the rope to the hitch of the Mule and viola, the Mule pulls the skin right off...

Oh, you don't have to use a Mule - any Pickup, ATV, UTV, or tractor will work too... ;)

Can't help you on the 'gator tho..

I like those dexter knives. Bought a pearing knife an it's great for breasting/gutting ducks.

The butcher blades are purty happenin' too. They're the only knives I've used that are worth a crap for down and dirty work for years 'cept for a hickory handled carbon steel butcher that I couldn't tell ya who made.

I use the same Benchmade that's clipped in my pocket everyday for everything but fish, including alligators, and I don't always clean fish, but when I do, I use a Dexter.

I use a box blade on everything especially good on alligators. I skin and quarter with it. I also use it to cut bulrush off my motor. I just have one but I have hundreds of blades and all of them are sharp.
