 What do you do with your deer?
I'm looking for creative ideas for deer meat. Aside from backstrap and tenderloins, I have done the following: 1) ground meat for chili, spaghetti, etc. 2) smoked sausage 3) venison burgers (mixed 25% pork) 4) cubed for stew meet
So what else can I do? Haven't done jerky because I don't have a dehydrater or slicer.

My father in law , has tamales made by these two Hispanic ladies. , they cook the meat. , hand shred it. , then make the tamales. . You talk about good , so good I provide the doe meat for a share of the spoils .
Personally I keep my tenderloins and backstraps. , keep all my roasts , and debone as much as I can for stew meat .

Yep tamales is something I need to look into. I keep backstrap and tenderloins to fry up. And always do deboning and grinding myself. I had 180lbs of jalapeño sausage made last year so I'm good on that lol

I use to keep some deer for roast, but I much prefer pork for a good rice and gravy.

take some of your backstrap and cut in pieces about 1'' to 11/2'' them cut a pocket in the piece kinda like you want it to lay open like a book but keep more meat holding it together. then stuff with sliced halepenos and some onion and a little worcestershire sauce and wrap up with a slice of bacon and grill you can also make some with fresh halepenos cut in half and cleaned out like a canoe then fill it with cream cheese and stuffed in with some onion and wraped with bacon you will need 2 or 3 toothpicks to hold them together. you can make these quick and easy and some fine eating

We get bacon burger made up. The add some pork in with the meat and its much better than regular ground deer meat!!

Deer Meat pie:
1. Cook deer in black pot untill meat is falling apart and eat as much as you can stand. 2. Then take the left overs and cook it until there is hardly and gravey left. 3. Mix in a can or two of veg-all 4. Get a pie crust fill with deer meat. 5. Top pie with biscuits and bake untill the biscuits are ready.

i throw neck meat in a crock pot with water cook it and dump in a bottle of you favorite bbQ sauce an thats some good eats too. that damn pie sounds awesome and JB i know that summer sausage is going to be some fine stuff. i got a lem grinder and meat mixer for hamburger meat. im looking at summer sausage kits in their catalog right now page4 make 5lbs. 4.99 25 lbs 12.99 or 100lbs 44.99 yall got me jacked up now.LOL im gone try to make some

Roast in a cast iron Dutch oven. Stuff with garlic and season Brown in some oil and remove Fry off some trinity and add roast Add beef stock ad a can of cream of mushroom and bring to a boil. Simmer until thickest part of roast is medium temp. Serve over rice and thank me later.

Another option I remembered is corned venison, like a corned beef or silver side, but done in a venison.

Nobody has mention making steaks. They are good and very quick/easy to cook. 1.5 minutes both sides on grill and eat

i havent done steaks because i dont use a prossesor. i de bone rear quarters while hanging. i usually grind hamburger and grill all back straps like i said above with halapenos and onion or cream cheese wrapped in bacon that is the best stuff i think ive ever had. im going to cut some steaks this year and try them i know they will be good
