I've never done any offshore/deep sea fishing before and the wife is down to go for vacation this year. Do any of all have any suggestions of where to go out of or charters to look at.

And what kind of fish should I try to fish for?

Man when I hear offshore fishing I think Marlin fishing. Hope you get a great trip lined up, I have done the offshore salmon fishing for King's and that was pretty sweet.

Can't beat Venice for the fishing right now but their is absolutely nothing else to do there. However you're not far from New Orleans. Just my opinion but if you're not goin on a sport fisher find someone with a cat the ride will be better since the wife is coming

We went offshore today, had shitty weather and ended up with some kings and black snapper, here was my best king today

If you grill em while they're still fresh, kingfish are pretty tasty. Cover em with olive oil and Paul Prudomme's. Throw a piece of hickory in with the charcoal. Good stuff!
