Ran up stream on the White River today looking to get into the white bass and hybrids.

Third cast with a crank bait and got a 19 inch walleye. I have never actually fished for these fanged rascals, but kind of cool to catch one.

What is the best way to cook these dudes? With crappie, I generally dip in buttermilk, roll in fish meal, and fry in peanut oil. I am guessing the northern boys that catch these have a different technique.

I like a lighter breading when frying walleye. I’ll just roll them in flour, or a batch of shore lunch if you want something more.

I usually soak mine in salt water or milk then roll in fry magic with Cajun seasoning and a little lemon pepper and fry in peanut oil until a little darker than golden brown. I also cut them up into smaller peices so they cook a little more even. Tasty little devils!! Nice fish by the way!! 2-3 if them feeds ya pretty good!!

Roll in Andys breading ( The best breading by far I've tried them all) and pan fry in canola oil

First, if they are big enough, fillet out the cheeks too--they are small nuggets, but excellent.

I just take Progresso Italian bread crumbs and add some garlic powder (NOT garlic salt) and a little cayenne pepper (however hot you like it). Roll in whipped egg, then dip in bread crumb mixture and fry a in oil (I usually use Canola oil) at 375 till dark golden brown.

Just made this last Sunday!

I will be going to Detroit River tomorrow to catch them while they run. Should be a good time.

We crush saltines with a rolling pin. just put the crackers in a zip loc and crush them up. Add salt, and pepper to taste. I usually use garlic salt instead of table salt. You can add other seasoning as well, but salt and pepper is fine. Then we dip the fillet in egg wash. Followed by a coating in the crackers. Usually we use vegetable oil, but that is because we are too cheap to buy peanut.

That is how I have grown up doing it.

I don't know if everyone does this but I've been "bleeding" my fish lately too. I cut them just behind the Gil's and bleed the blood out of them when I put them in the live welll. Fried fish last night and my buddy doesn't do that and you could really tell the difference in our fish. His tasted really fishy where mine were pretty clean. I also don't think they clean them very well before freezing them tho.

I forgot about the cheek meat. My brother gave me down the road for not getting it.

I skinned it, soaked in saltwater for a few hours, coated with olive oil, pepper, seasoning, filled with chopped onions and butter. Wrapped in foil and grilled 8 minutes per side.

I used to say crappie are my favorite fresh water fish (trout is close) but believe walleye is better.

the final product.

Wish I was more regular at catching them. Would love to fillet out about ten of them and do them up in a beer batter and fry with pups and shrimp.

Walleyes cover the spectrum as far as depth. Most these fish were caught in 20-50 FOW suspended 10-20 feet down. Even in the the summer we catch them as shallow as 3ft in 70 degree water. As long as there is bait holding the walleyes will follow but they do generally like the colder deeper water if its available but they can thrive in shallow lakes as well. The great lakes are "ocean lakes" we go 20 miles off shore a lot of times over 200ft when fish are holding there. I like the big water fishing.
