Well then, let's go at it this way...

What direction are you leaning? Beef, fish, pork or fowl?

10-4 on the "pack it up and bring it down" part.

Have you smoked a whole turkey? They turn out super moist and you will have leftovers for DAYS!

Smoked meatloaf on the egg is very good, too.

Angels on Horseback -- OK, THIS IS THE ONE YOU NEED TO DO!!!!!!
Get some large shrimp - biggest you can find. Bust the heads off 'em and peel 'em all the way down, leaving the last section of shell and the tail. De-vein them. Lay a raw oyster into the groove created by de-veining and wrap it tight with a half strip of bacon. Skewer them until the stick is full (try to make your stick go through the tail and head of the shrimp, helping to secure the bacon - the bacon will secure the oyster). Generously dust with Best Stop seasoning/Tony C's and smoke 'em till done - it shouldn't take too long. Avoid direct heat as this will cook the bacon and not allow the shrimp & oyster to cook. If you want, you can smoke them until the shrimp & oyster are done, then quickly put them over a direct flame to sear the bacon.
However many you think that y'all might eat, make at least 3 X that amount.

I haven't done this yet, but want to -- smoked oysters on the half shell. I've also wanted to try smoking some boiled eggs (not sure how that would turn out, but I want to try it).

River if you have any hot wire aka electric fence take some and make up some wire forms to hold cornish hens. Take the wire and run it up through the daisy wheel and dangle the hens as high as you can get them. Do this after you have plastered them with seasoning. Another thought is a couple of homemade pecan pies on the egg.
How about some catfish on the egg or make a dutch oven batch of chili smoke cooked.

Cook some big 'ol tuna steaks! Redfish on the halfshell is good as well with a little hickory smoke. KABOBS are also good. If you have never done corn on the cob do that as well. Baked taters are awesome. I take them and baste in olive oil and cover in sea salt. I put them on the BGE at 350-400 for about 1 hour to 1:15 indirect with some smoke. You'll eat the skins before the inside. The options are limitless River!!!!!

Oh, I also like to cook pork tenderloin like I do steak. I generally do the flash cook at 600 for about 45sec on all 4 sides then cook until the internal temp is 165 at 400F.
