 Deer Marsala
Made this for dinner tonight, this is one of my favorite ways to eat deer.
1 1/2 pounds deer steak 1 1/2 cups sliced mushrooms 2 cups marsala or white wine 1 1/2 cups heavy cream flour salt pepper garlic powder onion powder
Make a flour dredge and season with salt, pepper, onion powder, and garlic powder to taste. Season both sides of the deer with the flour. I like to use NY strip size portions of deer.
Heat a large pan and add just enough olive oil to coat the bottom. Brown both sides of the deer to your preferred doneness and set aside. Dump in the mushrooms and scrape up all the drippings. Let the shrooms wilt a bit then add the wine and reduce to almost half. Stir in the heavy cream and let that simmer for a couple of minutes then put the steak back in the pan for another 2-3 minutes.
Serve over mashed potatoes made to your liking!

Thanks! The last time I just cooked the steak I cooked it with onions and mushrooms, I like it that way. I haven't really had deer that I didn't like, to bad we only get 1 a year here

There are some circumstances where we can kill 2, if an area is over populated they put out extra tags, but for the most part it's one a year. But we can also kill an elk, black bear, mountain lion, and pronghorn, not that I ever have but it's there.

Looks great- similar recipe to mine BUT I don't use cream- i saute mushrooms(morels in spring0 and onions in butter- add some flour and cook 2-3 min- then add some marsala wine and beef stock or chix stock depending upon what meat I have used- then i cut meat- this week I used turkey breast shot day before- into 1-2 oz scallops- pound them and dredge in seasoned flour- then i suate them quick and add sauce- super-easy.

That sounds really good too, I think I will pound the steak out next time, didn't think about that. I really need to find a place to find morrels here, supposedly thew grow near here.
