i make mine a lil different then cored and stuffed simple and good as hell 1 thing of cream cheese. finely shredded sharp cheddar cheese. garlic salt. lemon or lime juice. jalapenos or guero peppers gueros are much milder than jalapenos. and bacon take your cream cheese and put in a bowl with shredded cheese gs and juice the juice makes the cheese thinner and mixable you can eyeball your amounts the sharp cheddar does help hold together a bit so i add a bit then take your peppers cut em length wise leave the tops on but clean em out fill with your mix wrap in bacon and pin with tooth pic then put em on the grill man there good. i find to get them good without burnt bacon on the bottom to get it cooked through on top . i make sure my bacon wrap covers the whole pepper. put them on face down first to flash the bacon then move them to the outer edge to cook slow while you cook the rest of your meal |

lil late but heres some pics i put em in a fish basket first to flash the tops and cook the bacon then speard em around the outside to slow cook |

Thanks, I am stealing your fish basket idea! I make pigeon and dove poppers, but hate the toothpick method for bacon wrapping. |
