 Smoked Dried Deer & Pork Sausage

Post Smoked Dried Deer & Pork Sausage
40 lbs Boston Butt
60 lbs Deer Meat
26oz Salt
7oz Black Pepper
4oz Cayenne
2oz Crushed Red Pepper
4oz Garlic Powder
4oz Sausage Cure (Sodium Nitrite)

Grind all meat and put in ice chest.Add all season and mix well in ice chest.Run meat through grinder one more time after mixing seasoning in and stuff in casing.Hang in smoker and smoke for 2 days.Let it hang 4 or 5 days.Check for dryness you desire.I like mine soft and red in the middle.
You do not cook it! It is cured!

Mesquite and Pecan bark....Fill bottom of 5 gallon metal bucket with charcoal and get red hot with pear burner.Fill rest of bucket with bark pieces to the top.Put tin foil over top of bucket and poke 10 holes in foil with knife.Put in smoke house and repeat twice a day.

I will try and get picture of the finished product after this weekend when it is done.The shiat sells for $6 a link around here. the picture has 230 links in the smoke house.We are grinding up 7 more deer this weekend.

Never used the bark but have used pecan hulls, also use some apple from time to time..

Yes...It is ready to eat.The Sodium Nitrite cures it and keeps any bacteria from growing.We just freeze it and pull a few links out when needed. It is just like jerky.If you leave it out on the counter it will continue to dry out and get tough.
