I'm getting about the same as him on the stock side. Empty boat with me weighting at a whopping 127 it will tap 29.

With my mods seen below and an empty boat with a new prop I can get Almost 30 in deep water with just the bare essentials in the boat at about 4200 RPM. I dont let my motor go much above that because I dont like to over rev the engine because they are sensitive to the high RPM and it costs so much to repair them.
Loaded down with gear and three guys the speed dramatically drops and in some circumstances I am unable to get on plane.
Shallow water running however, with a heavy load, I get about 26-27MPH Water less than 3 feet deep. Its amazing how shallow water helps these motors "push"
Lots of guys on here claim higher speeds but I'm sure they are turning more RPM's and are in better locations for a MM.
