Muskrat is very good, beaver is better. My kids will take a plate of beaver over beaf or pork roast any day. I cooked up a huge batch of beaver in college and told people it was deer and it was gone in minutes. Asked for more even after I told them what it was. Not a lot of meat on a beaver. Mostly guts and fat.
