Take a black pot and line the bottom with potatoes sliced about 1/4" thick, layer with deer meat that has been browned in a skilled. Too with onions then more potatoes. Pour in a beer and bake for about 3 hours on low heat. You will hurt yourself trying to eat it all. Also take the heart and core it like a bell pepper, stuff with onion and garlic, season up and grill it slow.

I usually get several deer each year. The first one I grind everythign except the loins and mix it with 25% beef tallow. The second one I can everything except the loins. Canned deer is the #1 thing I like to do and have tons of people ask me to give them some. The third is divided between jerky, roasts, and steaks. The rest are either or made into summer sausage and wieners or donated (depends how much time I have).
This year I might not make any sausage because I processed two caribou in September into brats and summer sausage.
If you have a lot of meat and you don't want to take freezer space, I highly recommend canning it. It comes out in a perfect gravy that tastes exactly like perfect roast beef. All you need to do is heat it up and serve it with noodles or some type of potato.

I sure you all have done this ya just forgot to mention it! So take 1/2 BIG back strap split down the middle do not cut all the way through . Make sea food dressing fill with dressing close it up wrap with thick pepper bacon put on smoker do not over cook! Enjoy!

When I lived in Illinois, practically every deer went to Stork's Custom Butchering in Palestine.
At least one whole deer a year went towards deer bacon. Always had summer sausage made with jalapeño cheddar and chopped pecans and some with jalapeño cheddar and chopped pistachio nuts.
Always had them make a few pounds of Slim Jims and various flavors of jerky, also.
They were pretty pricey for their processing...but WOW....that bacon was awesome!

Process my own. Backstraps for steak, a little stew meat saved and the rest all for jerky.
