Got on them the other night. Ended up 2 shy of our limit but still not bad for 3 1/2 hours of gigging.

Here's the recipe my sis-in-law put together. It's pretty good.
1/2 lb shrimp (any seafood works)
1/2 cup softened butter
1 tblsp lemon juice
1/2 cup water
1 tbsp minced onion( I usually add a little more )
1 1/2 tsp parsley
3 oz cream cheese
2 oz crumbled blue cheese
Preheat oven to 375
Boil shrimp then put in ice bath
Chop shrimp
Mix butter and cream cheese until soften and mixed well
Add all ingredients an mix well
Place a small amount of mixture into each filet and roll and place in pan. Sprinkle Tonys on top of filets and bake 25-45 mins depending on size of filets

That's a long way around cleaning one, just fillet the entire side to the tail, flip it over and fillet it of the skin like anything else. The two separate fillets will pull apart after so you end up with 4 total. And yes, I leave the smaller ones whole, slice the top middle, fillet out to each side, stuff it and grill it :)

Grilled, stuffed with crab, old bay and butter mix. Super easy 30 minutes at 375 on the grill. Break you mouth good.
