Post Gumbo recipe.
Thinkin bout makin some gumbo for a cookout here soon. Anyone got any good recipes they're willing to share? Probably be 10-15 ppl.

Rabbit Gumbo
In black iron pot, heat the oil over a medium fire, then add the flour and make a very dark roux .Add the onions, celery, and bell peppers and cook, stirring constantly, until the onions are clear. Add the parsley, garlic, water, steak sauce, hot sauce, rotel not drained then drop in the rabbit meat and andouille. Stir, let it cook covered for 3-6 hours lower fire and stir occassionally.
make some rice and call me over
feeds 8-10 grown menziziz

1 ½ cups olive oil
hot sauce to taste or cayenne pepper
1 ½ cups flour
1 cup chopped fresh parsley
1 tablespoon chopped garlic
1 can rotel
4 cups water
1 bunch shallots chopped up
2 tablespoons whostershire sauce
1 pound andouille
2 cups chopped onions
3lbs rabbit, cut into 1" pieces
½ cup chopped celery
1 cup chopped bell peppers

I was about to ask what kinda critter you done killed or found --- that
makes a bit of a difference on the details of the recipe....


But we likes to start with some kinda bird and some kinda sea critter
boiled up in some crab boil --- all the while we makin the roux --- and
seein if they is any pork about.... Cut an saute "the trinity" onion celery
and bell pepper ( hope we got a red one left ) --- toss in a pinch o this
and a peck o that.... Drink a bit o whiskey --- grind a bit o fresh sassafras
for file" --- drink a bit mo whiskey....

Best I remember it always turns out good --- if you cook it long enough
and sip enough whiskey....

Ingredients:
1 whole chicken or 2 mallards
2 pounds of fresh gulf skrimp
2.5 pounds of pure pork sausage
6-8 medium gulf crabs
2 medium yellow onions
2 bunches green onions
3 pods of garlic
1 bell peper
granulated onion,garlic and tonys.
file' to your taste

The roux
.5 cup of vegetable oil and .5 cup of bacon greese strained
1.5 cups of all puropse flour

I will not post up the process because someone will just say that it not right or their way is better. :mrgreen:

This list will feed me for two days or the normal 5 person family for one sitting.

1. go to supermarket.
2. go find the savioe's roux in a jar.
3. VERY IMPORTANT: read directions on side of jar on how to cook a gumbo.
4. go buy needed ingrediants and go home and make gumbo.
