After steak is cooked add in about a cup of sliced portobello mushrooms and reduce about a cup of wine with 1Tbs of brown sugar garlic onion powder (I never measure so just a touch I guess) reduce it till you can drag your spoon across the pan and the liquid doesn't run back together like d-Guidry runs to a public land hunt post. And put that on top. Cest Bon.

That and duck con fit recipe that I will hold a secret because he asked me too. But boy that'll make a duck disappear quicker than d-guidry's cupped up ducks on the north flats.

Re: N Flats duck calling etiquette Add some creole seasoning to some olive oil, mix it in a blender and pour over steak making sure to coat both sides. Let marinade for a couple of hours then throw it on the grill, using charcoal not gas, and cook to medium rare. My favorite way to cook a rib eye..
