Cover with your choice of rub seasoning smoke at 200 degrees for 3 hours uncovered, 2 hours covered, then 1 hour uncovered. It is mandatory to consume at minimum a 12 pack of beer while smoking ribs.

You can add some hidden valley ranch dry seasoning for a little different kick.

Pork ribs, garlic salt, Tony's, black pepper, meat tenderizer in the rub, some slap yo mama if you like, eat them with sweet baby rays sweet chipotle BBQ sauce, it's awesome. put the grill as low as it will go, put a pan with water about 1/2" in a foil basting pan on the lower rack or down on the burner covers and the ribs on the upper rack or above the water and let it eat for about 3 hours, then when the water is gone leave it on the grill about two hours, 5 hours give or take total and lots o beers, best ribs u ever ate...

"Kansas City rub" recipe from google search:

1/2 cup brown sugar
1/4 cup paprika
1 tablespoon black pepper
1 tablespoon salt
1 tablespoon chili powder
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon cayenne

Coat your ribs with mustard and KC rub and wrap tightly in plastic wrap in the refrigerator overnight. Set em out and let em come to room temperature. Smoke at 250 for about 4 hours, mopping with a 50/50 mix of 100% apple juice and Jack Daniels whiskey every 45 minutes. Glaze with BBQ sauce of choice (Sweet Baby Ray's is mine) and leave em on for another 30 minutes. Drink lots of beer and enjoy. THEY ARE FABULOUS!!!
